Ingredients

  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add black beans, cumin, chili powder, garlic powder, salt, and pepper. Cook for 5-7 minutes until heated through.
  3. In a bowl, combine mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.
  4. Warm the corn tortillas in a separate skillet or microwave.
  5. Assemble the tacos by placing the black bean mixture on the tortillas and topping with mango salsa.

  • For extra heat, leave some seeds in the jalapeño.
