Ingredients

  • 1 lb spicy Italian sausage
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until softened.
  3. Add the spicy Italian sausage, breaking it up with a spoon, and cook until browned.
  4. Stir in the diced tomatoes, chicken broth, and Italian seasoning.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Add the cannellini beans and kale, cooking for an additional 5-10 minutes until the kale is wilted.
  7. Season with salt and pepper to taste before serving.
