- 1 lb spicy Italian sausage
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 cups kale, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until softened.
- Add the spicy Italian sausage, breaking it up with a spoon, and cook until browned.
- Stir in the diced tomatoes, chicken broth, and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the cannellini beans and kale, cooking for an additional 5-10 minutes until the kale is wilted.
- Season with salt and pepper to taste before serving.
Notes
- For a milder soup, use sweet Italian sausage instead of spicy.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
