Ingredients

Scale
  • For the Chicken:
    • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
    • 2 tablespoons soy sauce
    • 1 tablespoon cornstarch
  • For the Broccoli:
    • 2 cups broccoli florets
    • 1 tablespoon olive oil
  • For the Noodles:
    • 8 oz rice noodles
  • For the Peanut Sauce:
    • 1/2 cup creamy peanut butter
    • 1/4 cup soy sauce
    • 2 tablespoons honey
    • 1 tablespoon sriracha (adjust to taste)
    • 1 tablespoon rice vinegar
    • 1 clove garlic, minced
    • 1 teaspoon ginger, grated

Instructions

  1. In a bowl, marinate the chicken pieces with soy sauce and cornstarch for 15 minutes.
  2. While the chicken marinates, cook the rice noodles according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add the broccoli florets and sauté for 3-4 minutes until bright green and tender-crisp.
  4. Add the marinated chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  5. In a separate bowl, whisk together all the peanut sauce ingredients until smooth.
  6. Once the chicken is cooked, reduce the heat to low and add the cooked noodles and peanut sauce to the skillet. Toss everything together until well combined and heated through, about 2-3 minutes.
  7. Serve immediately, garnished with chopped peanuts and green onions if desired.
