- 1/4 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- For Topping:
- 1 cup panko breadcrumbs
- 2 tablespoons melted butter
- 2 green onions, chopped
- 1 tablespoon furikake seasoning
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, combine sushi rice and water; bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved; fold this mixture into the cooked rice and let it cool slightly.
- In another bowl, combine diced salmon, mayonnaise, sriracha, soy sauce, and sesame oil; mix well.
- In a separate bowl, combine panko breadcrumbs and melted butter.
- In a baking dish, spread the sushi rice evenly on the bottom, then layer the salmon mixture on top.
- Sprinkle the panko mixture over the salmon layer and bake for 20-25 minutes until the top is golden brown.
- Remove from the oven, garnish with chopped green onions and furikake seasoning, and let it cool for a few minutes before serving.
Notes
- This dish can be made ahead of time; prepare the sushi rice and salmon mixture, then assemble and bake just before serving.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
