Description

  • For the Sushi Bake:
    • 2 cups sushi rice, rinsed
    • 2 1/2 cups water
    • 1/4 cup rice vinegar
    • 2 tablespoons sugar
    • 1 teaspoon salt
  • For the Salmon Mixture:
    • 1 pound fresh salmon, skinless and diced
    • 1/4 cup mayonnaise
    • 2 tablespoons sriracha sauce
    • 1 tablespoon soy sauce
    • 1 teaspoon sesame oil
  • For Topping:
    • 1 cup panko breadcrumbs
    • 2 tablespoons melted butter
    • 2 green onions, chopped
    • 1 tablespoon furikake seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, combine sushi rice and water; bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved; fold this mixture into the cooked rice and let it cool slightly.
  4. In another bowl, combine diced salmon, mayonnaise, sriracha, soy sauce, and sesame oil; mix well.
  5. In a separate bowl, combine panko breadcrumbs and melted butter.
  6. In a baking dish, spread the sushi rice evenly on the bottom, then layer the salmon mixture on top.
  7. Sprinkle the panko mixture over the salmon layer and bake for 20-25 minutes until the top is golden brown.
  8. Remove from the oven, garnish with chopped green onions and furikake seasoning, and let it cool for a few minutes before serving.

Notes

  • This dish can be made ahead of time; prepare the sushi rice and salmon mixture, then assemble and bake just before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • For a spicier kick, increase the amount of sriracha in the salmon mixture.
