Description

These Spicy Sesame Chicken & Broccoli Ramen Bowls are a delightful fusion of crispy, juicy chicken and tender broccoli, all enveloped in a rich, savory sesame sauce. The ramen noodles provide a satisfying chew, while the heat from the spices adds an exciting kick that tantalizes the taste buds.

  • For the Chicken:
    • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
    • 2 tablespoons soy sauce
    • 1 tablespoon sesame oil
    • 1 tablespoon cornstarch
    • 1 teaspoon garlic powder
    • 1 teaspoon ginger powder
  • For the Sauce:
    • 1/4 cup soy sauce
    • 2 tablespoons honey
    • 2 tablespoons rice vinegar
    • 1 tablespoon sriracha (adjust to taste)
    • 1 tablespoon sesame seeds
  • For the Ramen:
    • 2 packs of instant ramen noodles (discard the seasoning packets)
    • 2 cups broccoli florets
    • 2 green onions, sliced

Instructions

  1. In a bowl, combine chicken pieces with soy sauce, sesame oil, cornstarch, garlic powder, and ginger powder. Let marinate for 15 minutes.
  2. In a separate bowl, whisk together the sauce ingredients: soy sauce, honey, rice vinegar, sriracha, and sesame seeds. Set aside.
  3. Cook the ramen noodles according to package instructions, adding broccoli florets in the last 2 minutes of cooking. Drain and set aside.
  4. In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the marinated chicken and cook for 6-8 minutes, or until golden brown and cooked through.
  5. Pour the sauce over the chicken in the skillet and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  6. In serving bowls, layer the ramen noodles and broccoli, then top with the spicy sesame chicken. Garnish with sliced green onions.

  • This dish can be made ahead of time; store the chicken and sauce separately in the refrigerator for up to 2 days.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
