    • 4 large portobello mushrooms, stems removed
  • For the filling:
    • 2 cups fresh spinach, chopped
    • 1 cup feta cheese, crumbled
    • 1/2 cup cream cheese, softened
    • 1/4 cup grated Parmesan cheese
    • 2 cloves garlic, minced
    • 1 tablespoon olive oil
    • 1/2 teaspoon black pepper
    • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  3. Add chopped spinach and cook until wilted, about 2-3 minutes.
  4. In a mixing bowl, combine the sautéed spinach, feta cheese, cream cheese, Parmesan cheese, black pepper, and salt. Mix until well combined.
  5. Place the portobello mushrooms on a baking sheet, gill side up, and fill each cap generously with the spinach and feta mixture.
  6. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
