These Spinach Garlic Meatballs Stuffed with Mozzarella are a delightful fusion of flavors and textures. Each bite reveals a tender, juicy meatball infused with aromatic garlic and fresh spinach, encasing a gooey, melted mozzarella center that oozes with every cut.

Ingredients

Scale
  • Meatball Mixture:
    • 1 lb ground beef
    • 1/2 lb ground pork
    • 1 cup fresh spinach, chopped
    • 3 cloves garlic, minced
    • 1/2 cup breadcrumbs
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
    • 1 tsp salt
    • 1/2 tsp black pepper
  • Stuffing:
    • 8 oz mozzarella cheese, cut into small cubes
  • For Cooking:
    • 2 tbsp olive oil
    • 1 cup marinara sauce (for serving)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, ground pork, chopped spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until well combined.
  3. Take a small amount of the meat mixture and flatten it in your palm. Place a cube of mozzarella in the center and wrap the meat around it, forming a ball. Repeat until all mixture is used.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Add the meatballs and sear them for about 3-4 minutes on each side until browned.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the meatballs are cooked through and the internal temperature reaches 160°F (70°C).
  6. Serve hot with marinara sauce drizzled over the top.

Notes

  • Make-ahead: You can prepare the meatballs a day in advance and store them in the refrigerator before cooking.
  • Storage: Leftover meatballs can be stored in an airtight container in the fridge for up to 3 days.
  • Substitutions: Ground turkey or chicken can be used instead of beef and pork for a leaner option.
