Ingredients

Scale
  • Pasta: 12 lasagna noodles, cooked al dente
  • Filling:
    • 2 cups fresh spinach, chopped
    • 2 cups mushrooms, sliced
    • 1 cup ricotta cheese
    • 1 cup mozzarella cheese, shredded
    • 1/2 cup Parmesan cheese, grated
  • Béchamel Sauce:
    • 4 tablespoons unsalted butter
    • 1/4 cup all-purpose flour
    • 3 cups whole milk
    • 1/2 teaspoon nutmeg
    • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, melt the butter over medium heat, then whisk in the flour to create a roux, cooking for 2 minutes until golden.
  3. Gradually add the milk, whisking continuously until the sauce thickens, about 5-7 minutes.
  4. Stir in nutmeg, salt, and pepper, then remove from heat.
  5. In a skillet, sauté the mushrooms over medium heat until browned, about 5 minutes, then add the spinach and cook until wilted.
  6. In a baking dish, spread a layer of béchamel sauce, followed by three lasagna noodles, half of the mushroom and spinach mixture, and half of the ricotta and mozzarella cheeses.
  7. Repeat the layers, finishing with a layer of noodles topped with béchamel sauce and remaining mozzarella and Parmesan cheese.
  8. Bake for 30-35 minutes until bubbly and golden on top.
  9. Let it cool for 10 minutes before slicing and serving.
