Description

A refreshing and nutritious Spring Veggie Grain Bowl topped with a delightful peach vinaigrette.


Ingredients

  • 1 cup cooked quinoa
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup bell peppers, diced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup walnuts, chopped
  • 1/4 cup peach preserves
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa and mixed greens.
  2. Add the cherry tomatoes, cucumber, red onion, bell peppers, feta cheese, and walnuts to the bowl.
