Ingredients

  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

  • 2 cups fresh strawberries, sliced
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. Combine the flour, baking powder, and salt in another bowl. Gradually mix this with the wet ingredients, alternating with the milk.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean. Let cool for 10 minutes in pans before transferring to cooling racks.
  8. Whip the heavy cream with powdered sugar until stiff peaks form.
  9. Layer the whipped cream and sliced strawberries between the cooled cakes, and spread whipped cream on the top and sides.
  10. Chill the cake in the refrigerator for at least 30 minutes before serving.

Notes

For a twist, you can add lemon curd between layers or swap strawberries with other berries. Be mindful of cooling the cake completely before frosting to prevent melting the whipped cream.
