- ½ cup unsalted butter, softened
- 1 cup milk

- 2 teaspoons baking powder

- 2 cups fresh strawberries, sliced
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Combine the flour, baking powder, and salt in another bowl. Gradually mix this with the wet ingredients, alternating with the milk.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean. Let cool for 10 minutes in pans before transferring to cooling racks.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Layer the whipped cream and sliced strawberries between the cooled cakes, and spread whipped cream on the top and sides.
- Chill the cake in the refrigerator for at least 30 minutes before serving.
Notes
For a twist, you can add lemon curd between layers or swap strawberries with other berries. Be mindful of cooling the cake completely before frosting to prevent melting the whipped cream.
