  • 2 cups chopped strawberries
  • 2 cups chopped rhubarb
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 2 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C), and gently grease a 9×13 baking pan with butter or line it with parchment paper.
  2. Toss together the chopped strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice in a mixing bowl until well combined. Set aside.
  3. Combine the all-purpose flour, rolled oats, brown sugar, cinnamon, baking powder, and salt in another bowl. Mix well before cutting in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Press about two-thirds of this crumb mixture into the prepared baking pan, creating an even crust.
  5. Spread the fruit filling evenly over the crust.
  6. Sprinkle the remaining crumb mixture over the fruit, creating a topping, and bake for about 40-45 minutes until golden brown.
  7. Allow the bars to cool completely before slicing into squares.

Notes

For the best texture, let the bars cool completely before slicing. You can also prepare the crumb mixture ahead of time and store it in the refrigerator for up to a week.
