Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 4 cups fresh strawberries, sliced
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix flour, sugar, baking powder, and salt.
  3. Add cold butter and mix until crumbly.
  4. Pour in heavy cream and stir until just combined.
  5. Turn the dough onto a floured surface and knead gently.
  6. Roll out to 1-inch thickness and cut into rounds.
  7. Place on a baking sheet and bake for 15-20 minutes until golden.
  8. While the cakes cool, mix sliced strawberries with powdered sugar and let sit.
  9. Whip the cream with vanilla until soft peaks form.
  10. Assemble the shortcakes by splitting them in half, adding strawberries and whipped cream, and topping with the other half.

Notes

  • For best results, use fresh strawberries.
  • Shortcakes can be made a day in advance and stored in an airtight container.
  • Feel free to add a splash of lemon juice to the strawberries for extra flavor.
