Ingredients

Scale
  • For the Chicken:
    • 2 boneless, skinless chicken breasts (about 1 pound)
    • 1 tablespoon olive oil
    • 1 teaspoon chili powder
    • 1 teaspoon garlic powder
    • Salt and pepper to taste
  • For the Street Corn Sauce:
    • 1 cup corn kernels (fresh or frozen)
    • 1/2 cup mayonnaise
    • 1/4 cup sour cream
    • 1 tablespoon lime juice
    • 1/4 teaspoon cayenne pepper
    • 1/4 cup crumbled cotija cheese
    • 2 tablespoons chopped cilantro
  • For the Rice:
    • 2 cups cooked white rice
    • 1 tablespoon lime juice
    • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat (about 400°F).
  2. In a bowl, mix olive oil, chili powder, garlic powder, salt, and pepper. Coat the chicken breasts with the mixture.
  3. Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from grill and let rest for 5 minutes.
  4. In a separate bowl, combine corn, mayonnaise, sour cream, lime juice, cayenne pepper, cotija cheese, and cilantro to make the street corn sauce.
  5. In a pot, mix the cooked rice with lime juice and salt, stirring until well combined.
  6. Slice the grilled chicken into strips.
  7. To assemble, place a serving of rice in a bowl, top with sliced chicken, and drizzle with street corn sauce.
  8. Garnish with additional cilantro and cotija cheese if desired.

Notes

  • This dish can be made ahead by marinating the chicken and preparing the street corn sauce a day in advance.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute Greek yogurt for sour cream.
