Instructions

  1. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the chicken pieces, season with chili powder, garlic powder, cumin, salt, and pepper, and cook for 7-10 minutes until golden brown and cooked through.
  2. While the chicken cooks, prepare the street corn sauce by combining corn, mayonnaise, sour cream, lime juice, cotija cheese, cilantro, and smoked paprika in a bowl. Mix well until smooth.
  3. Once the chicken is cooked, remove it from the heat and let it rest for a few minutes.
  4. To serve, place a generous scoop of rice in a bowl, top with the cooked chicken, and drizzle with the street corn sauce. Garnish with additional cilantro if desired.
