  • For the Pinwheels:
    • 1 lb flank steak, pounded to 1/4 inch thickness
    • 1 cup fresh spinach, chopped
    • 1/2 cup cream cheese, softened
    • 1/4 cup grated Parmesan cheese
    • 2 cloves garlic, minced
    • 1 tsp salt
    • 1/2 tsp black pepper
  • For the Marinade:
    • 1/4 cup olive oil
    • 2 tbsp balsamic vinegar
    • 1 tsp dried oregano
    • 1 tsp dried thyme

Instructions

  1. In a small bowl, whisk together olive oil, balsamic vinegar, oregano, and thyme to create the marinade.
  2. Place the flank steak in a resealable bag and pour the marinade over it. Seal and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 375°F (190°C).
  4. In a mixing bowl, combine cream cheese, Parmesan cheese, garlic, spinach, salt, and pepper until well blended.
  5. Remove the steak from the marinade and spread the cheese mixture evenly over the steak.
  6. Starting from one end, tightly roll the steak into a log shape and secure with kitchen twine or toothpicks.
  7. Slice the rolled steak into 1-inch thick pinwheels and place them on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 20-25 minutes, or until the steak is cooked to your desired doneness and the cheese is bubbly.
