A delicious and cheesy bake featuring summer squash and zucchini, perfect for a summer meal.
Ingredients

- 2 medium zucchinis, sliced
- 2 medium summer squashes, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 eggs, beaten
- 1/2 cup milk
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the sliced zucchinis and summer squashes.
- Add the beaten eggs, milk, garlic powder, salt, and pepper to the vegetables and mix well.
- Stir in the shredded cheddar cheese and half of the breadcrumbs.
- Transfer the mixture to a greased baking dish.
- Top with the remaining breadcrumbs and grated Parmesan cheese.
- Bake for 30-35 minutes or until the top is golden brown and the vegetables are tender.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or onions for extra flavor.
- This dish can be made ahead of time and reheated before serving.
- For a spicier version, add some red pepper flakes.
