Description

A delicious and cheesy bake featuring summer squash and zucchini, perfect for a summer meal.


Ingredients

  • 2 medium zucchinis, sliced
  • 2 medium summer squashes, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced zucchinis and summer squashes.
  3. Add the beaten eggs, milk, garlic powder, salt, and pepper to the vegetables and mix well.
  4. Stir in the shredded cheddar cheese and half of the breadcrumbs.
  5. Transfer the mixture to a greased baking dish.
  6. Top with the remaining breadcrumbs and grated Parmesan cheese.
  7. Bake for 30-35 minutes or until the top is golden brown and the vegetables are tender.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add other vegetables like bell peppers or onions for extra flavor.
  • This dish can be made ahead of time and reheated before serving.
  • For a spicier version, add some red pepper flakes.
