Ingredients

Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the coconut milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the shredded coconut.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with additional coconut cream or syrup.
Notes
- For a richer flavor, use full-fat coconut milk.
- These pancakes can be made ahead and reheated in a toaster.
