Description

Ingredients

  • Sweet Potatoes: 2 pounds, peeled and thinly sliced
  • Cranberries: 1 cup, fresh or frozen
  • Heavy Cream: 1 cup
  • Butter: 4 tablespoons, unsalted
  • Brown Sugar: 1/2 cup, packed
  • Nutmeg: 1/2 teaspoon, ground
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Parmesan Cheese: 1 cup, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced sweet potatoes, cranberries, heavy cream, brown sugar, nutmeg, salt, and pepper. Mix well until the sweet potatoes are evenly coated.
  3. Grease a 9×13 inch baking dish with 1 tablespoon of butter.
  4. Layer half of the sweet potato mixture in the baking dish, then sprinkle half of the grated Parmesan cheese on top.
  5. Add the remaining sweet potato mixture and top with the remaining Parmesan cheese.
  6. Dot the top with the remaining butter, cut into small pieces.
  7. Cover the dish with aluminum foil and bake for 45 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the sweet potatoes are tender when pierced with a fork.

Notes

  • This dish can be prepared a day in advance. Assemble the gratin, cover it tightly with plastic wrap, and refrigerate. Bake it the next day, adding an extra 10 minutes to the cooking time.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter version, substitute heavy cream with coconut milk or almond milk.
