- 4 bell peppers (any color)
- 1 lb chicken breast, diced
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup teriyaki sauce
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the bell peppers by cutting off the tops and removing the seeds.
- Sauté the onion and garlic in olive oil over medium heat until softened.
- Cook the diced chicken until no longer pink, approximately 5-7 minutes.
- Incorporate the pineapple chunks and teriyaki sauce, cooking for an additional 2-3 minutes.
- Season with salt and pepper.
- Stuff each bell pepper with the chicken and pineapple mixture.
- Prepare a baking dish with the stuffed peppers and cover with foil.
- Bake for 25-30 minutes until the peppers are tender.
- Remove the foil and bake for an additional 10 minutes to caramelize the tops.
- Garnish with green onions before serving.
