Ingredients
Scale
- For the Salmon Burgers:
- 1 lb fresh salmon fillet, skin removed
- 1/4 cup teriyaki sauce
- 1/4 cup panko breadcrumbs
- 1 egg, beaten
- 1 tablespoon green onions, finely chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- For the Asian Slaw:
- 2 cups green cabbage, shredded
- 1 cup carrots, shredded
- 1/4 cup red bell pepper, thinly sliced
- 1/4 cup cilantro, chopped
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- Salt and pepper to taste
- For Serving:
- 4 burger buns
- Extra teriyaki sauce for drizzling
Instructions
- In a food processor, pulse the salmon fillet until finely chopped but not pureed.
- In a large bowl, combine the chopped salmon, teriyaki sauce, panko breadcrumbs, beaten egg, green onions, garlic powder, and black pepper. Mix until just combined.
- Form the mixture into 4 equal patties, about 1 inch thick.
- Heat a non-stick skillet over medium heat and add a drizzle of oil. Cook the patties for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 145°F).
- While the burgers are cooking, prepare the Asian slaw by combining cabbage, carrots, red bell pepper, cilantro, rice vinegar, sesame oil, honey, salt, and pepper in a bowl. Toss well to combine.
- Toast the burger buns lightly on the skillet for 1-2 minutes.
- Assemble the burgers by placing a salmon patty on each bun, topping with a generous portion of Asian slaw, and drizzling with extra teriyaki sauce.
- Serve immediately and enjoy!
