  • For the Salmon Burgers:
    • 1 lb fresh salmon fillet, skin removed
    • 1/4 cup teriyaki sauce
    • 1/4 cup panko breadcrumbs

    • 1 teaspoon garlic powder
    • 1/2 teaspoon black pepper
  • For the Asian Slaw:
    • 2 cups green cabbage, shredded
    • 1 cup carrots, shredded
    • 1/4 cup red bell pepper, thinly sliced
    • 1/4 cup cilantro, chopped
    • 2 tablespoons rice vinegar
    • 1 tablespoon sesame oil
    • 1 tablespoon honey
    • Salt and pepper to taste
  • For Serving:
    • 4 burger buns
    • Extra teriyaki sauce for drizzling

Instructions

  1. In a food processor, pulse the salmon fillet until finely chopped but not pureed.
  2. In a large bowl, combine the chopped salmon, teriyaki sauce, panko breadcrumbs, beaten egg, green onions, garlic powder, and black pepper. Mix until just combined.
  3. Form the mixture into 4 equal patties, about 1 inch thick.
  4. Heat a non-stick skillet over medium heat and add a drizzle of oil. Cook the patties for 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 145°F).
  5. While the burgers are cooking, prepare the Asian slaw by combining cabbage, carrots, red bell pepper, cilantro, rice vinegar, sesame oil, honey, salt, and pepper in a bowl. Toss well to combine.
  6. Toast the burger buns lightly on the skillet for 1-2 minutes.
  7. Assemble the burgers by placing a salmon patty on each bun, topping with a generous portion of Asian slaw, and drizzling with extra teriyaki sauce.
