    • 1 cup blackberry puree (fresh or frozen)
  • Frosting:
    • 1 cup unsalted butter, softened
    • 4 cups powdered sugar
    • ½ cup blackberry puree
    • 2 tablespoons heavy cream
    • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fold in the blackberry puree gently until evenly distributed.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  9. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar, blackberry puree, heavy cream, and vanilla extract, mixing until fluffy.
  10. Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
