  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 teaspoons kosher salt
  • 2 teaspoons seasoning blend
  • 1 teaspoon freshly ground black pepper
  • 1 cup vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup sour cream
  • 1.5 cups shredded Colby Jack cheese
  • 1.5 cups shredded cheddar cheese
  • 1 cup shredded Parmesan cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Prepare the potatoes by peeling and slicing them into 1/8-inch thick rounds.
  3. Arrange the potato slices upright in a 9×13-inch casserole dish.
  4. Make the sauce by melting butter in a medium saucepan over medium heat, adding chopped onion and minced garlic, and sautéing until translucent.
  5. Create a roux by whisking in flour and cooking until light golden brown.
  6. Add kosher salt, seasoning blend, black pepper, and broth to the saucepan, cooking until slightly thickened.
  7. Turn off the heat, then stir in the Colby Jack, cheddar, and half of the Parmesan cheese.
  8. Spread the sour cream evenly over the arranged potatoes.
  9. Pour the cheese mixture over the potatoes, ensuring all slices are coated.
  10. Top with the remaining Parmesan and cheddar cheese.
  11. Bake covered with foil for 1 hour, then uncover and bake for an additional 30 minutes.
  12. Cool for 5 minutes before serving.
