- 1 large white or yellow onion
- 3 to 4 cloves garlic
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 teaspoons kosher salt
- 2 teaspoons seasoning blend
- 1 teaspoon freshly ground black pepper
- 1 cup vegetable or chicken broth
- 1 cup heavy cream
- 1 cup sour cream
- 1.5 cups shredded Colby Jack cheese
- 1.5 cups shredded cheddar cheese
- 1 cup shredded Parmesan cheese
Instructions
- Preheat your oven to 400°F.
- Prepare the potatoes by peeling and slicing them into 1/8-inch thick rounds.
- Arrange the potato slices upright in a 9×13-inch casserole dish.
- Make the sauce by melting butter in a medium saucepan over medium heat, adding chopped onion and minced garlic, and sautéing until translucent.
- Create a roux by whisking in flour and cooking until light golden brown.
- Add kosher salt, seasoning blend, black pepper, and broth to the saucepan, cooking until slightly thickened.
- Turn off the heat, then stir in the Colby Jack, cheddar, and half of the Parmesan cheese.
- Spread the sour cream evenly over the arranged potatoes.
- Pour the cheese mixture over the potatoes, ensuring all slices are coated.
- Top with the remaining Parmesan and cheddar cheese.
- Bake covered with foil for 1 hour, then uncover and bake for an additional 30 minutes.
- Cool for 5 minutes before serving.
Notes
