Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing until just combined.
- Using a cookie scoop, drop dough into a greased muffin tin, pressing down slightly to form cups.
- Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and let cool for 5 minutes before transferring to a wire rack.
- For the filling, whip the heavy cream until stiff peaks form, then gently fold in the mascarpone cheese, powdered sugar, vanilla extract, and cooled coffee until smooth.
