  • For the Mascarpone Filling:
    • 1 cup mascarpone cheese
    • 1 cup heavy cream
    • 1/2 cup powdered sugar

    • 1/4 cup strong brewed coffee, cooled
    • 2 tablespoons cocoa powder, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, mixing until just combined.
  5. Using a cookie scoop, drop dough into a greased muffin tin, pressing down slightly to form cups.
  6. Bake for 10-12 minutes or until the edges are golden brown. Remove from the oven and let cool for 5 minutes before transferring to a wire rack.
  7. For the filling, whip the heavy cream until stiff peaks form, then gently fold in the mascarpone cheese, powdered sugar, vanilla extract, and cooled coffee until smooth.
  8. Once the cookie cups are completely cool, fill each cup with the mascarpone mixture and dust with cocoa powder before serving.
