This Turkey Spinach Mushroom Skillet is a delightful medley of tender turkey, earthy mushrooms, and vibrant spinach, all enveloped in a creamy sauce. The dish offers a satisfying combination of textures, with the juicy turkey and soft mushrooms complemented by the slight crunch of fresh spinach, creating a comforting and flavorful experience.

Ingredients

  • Protein: 1 lb ground turkey
  • Vegetables: 8 oz mushrooms, sliced; 4 cups fresh spinach; 1 medium onion, diced; 2 cloves garlic, minced
  • Dairy: 1 cup heavy cream; 1/2 cup grated Parmesan cheese
  • Seasonings: 1 tsp Italian seasoning; salt and pepper to taste; 1 tbsp olive oil

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat until shimmering.
  2. Add the diced onion and minced garlic, sautéing for 2-3 minutes until fragrant and translucent.
  3. Increase the heat to medium-high and add the ground turkey, cooking for 5-7 minutes until browned and cooked through, breaking it apart with a spatula.
  4. Stir in the sliced mushrooms and cook for an additional 4-5 minutes until they are tender and have released their moisture.
  5. Reduce the heat to medium, then add the fresh spinach, stirring until wilted, about 2 minutes.
  6. Pour in the heavy cream and sprinkle in the Parmesan cheese, stirring to combine. Allow the mixture to simmer for 3-4 minutes until slightly thickened.
  7. Season with Italian seasoning, salt, and pepper to taste. Serve hot.
