Ingredients

  • 1 cup of pumpkin puree
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, grated
  • 1 can of coconut milk
  • 2 tablespoons of curry powder
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the chopped onion, garlic, and ginger until fragrant.
  2. Add the curry powder and cumin, stirring for another minute.
  3. Stir in the pumpkin puree and chickpeas, mixing well.
  4. Pour in the coconut milk and bring to a simmer.
  5. Season with salt and pepper, and let it cook for about 20 minutes.
  6. Serve hot, garnished with fresh cilantro.
