Ingredients

- 1 can of chickpeas, drained and rinsed
- 1 cup of pumpkin puree
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of ginger, grated
- 1 can of coconut milk
- 2 tablespoons of curry powder
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the chopped onion, garlic, and ginger until fragrant.
- Add the curry powder and cumin, stirring for another minute.
- Stir in the pumpkin puree and chickpeas, mixing well.
- Pour in the coconut milk and bring to a simmer.
- Season with salt and pepper, and let it cook for about 20 minutes.
- Serve hot, garnished with fresh cilantro.

- Adjust the spice level by adding more curry powder or chili flakes.
