  • 1 head of cauliflower, cut into florets
  • 1 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the oven: Bring your oven to a toasty 400°F (200°C).
  2. Prepare the cauliflower: In a large bowl, toss the freshly cut cauliflower florets with olive oil, BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Roast the florets: Spread the seasoned cauliflower out in a single layer on a baking sheet. Roast for about 25–30 minutes, stirring halfway through.
  4. Warm the tortillas: Meanwhile, warm your corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  5. Assemble the tacos: Lay the roasted cauliflower in the center of each tortilla and add avocado and cilantro on top.
  6. Serve and savor: Present your tacos with lime wedges on the side.

Notes

For added texture, try lightly grilling the tortillas for a smoky touch. You can also prepare the cauliflower ahead of time and reheat before serving.
