Description

A creamy and delicious guilt-free version of Alfredo made with zucchini noodles.


Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup cauliflower florets
  • 1 cup vegetable broth
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Spiralize the zucchinis to create noodles and set aside.
  2. In a pot, steam the cauliflower florets until tender.
  3. In a blender, combine the steamed cauliflower, vegetable broth, nutritional yeast, garlic, olive oil, salt, and pepper. Blend until smooth.
  4. In a skillet, heat the zucchini noodles over medium heat for 2-3 minutes.
  5. Pour the Alfredo sauce over the zucchini noodles and toss to combine.
  6. Cook for an additional 2-3 minutes until heated through.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker sauce, add more cauliflower.
  • Adjust seasoning according to taste.
