Description
A creamy and delicious guilt-free version of Alfredo made with zucchini noodles.
Ingredients

- 2 medium zucchinis
- 1 cup cauliflower florets
- 1 cup vegetable broth
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Spiralize the zucchinis to create noodles and set aside.
- In a pot, steam the cauliflower florets until tender.
- In a blender, combine the steamed cauliflower, vegetable broth, nutritional yeast, garlic, olive oil, salt, and pepper. Blend until smooth.
- In a skillet, heat the zucchini noodles over medium heat for 2-3 minutes.
- Pour the Alfredo sauce over the zucchini noodles and toss to combine.
- Cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with fresh parsley.
Notes
- For a thicker sauce, add more cauliflower.
- Adjust seasoning according to taste.
- This dish is best served immediately.
