- 1 tablespoon sugar
- 1 teaspoon salt
Equipment you will need

- Heavy skillet or cast-iron pan, or a baking steel, pizza stone or sturdy baking tray
- Rolling pin
- Clean kitchen towel
- Kitchen scale and measuring cups
- Tongs or a spatula for flipping
Instructions
Follow these six steps for soft, puffy pitas. Read through them once first, especially the cooking step, because the heat needs to be ready when the dough is.
Step 1: Prepare the yeast mixture
- In a large bowl, combine the warm water, sugar and instant yeast.
- Stir gently and let the mixture sit for 5 minutes.
- The water should feel warm, not hot, to protect the yeast.
Step 2: Make the dough
- Add the olive oil, flour and salt.
- Mix with a spoon until a rough dough forms.
- Transfer the dough to a lightly floured surface.
- Knead for 8-10 minutes, until smooth, elastic and soft.
- If the dough feels very sticky, add a little flour gradually. Avoid adding too much, as the pita may become dry.
Step 3: Let the dough rise
- Place the dough in a lightly oiled bowl.
- Cover with a clean kitchen towel or plastic wrap.
- Leave in a warm place for 1-1Β½ hours, or until doubled in size.
Step 4: Divide and shape
- Gently press the dough to release excess air.
- Divide it into 8 equal pieces.
- Shape each piece into a smooth ball.
- Cover the dough balls and let them rest for 10-15 minutes.
- On a lightly floured surface, roll each ball into a circle approximately 15-18 cm (6-7 inches) wide and 3-5 mm thick.
- Keep the circles evenly thick so they can puff up properly.
Step 5: Cook the pita bread
Option A: On the stovetop
- Heat a heavy skillet or cast-iron pan over medium-high heat until very hot.
- Place one pita in the dry pan.
- Cook for about 30-60 seconds, until bubbles begin to appear.
- Flip and cook the other side for another 1-2 minutes.
- Flip once more if needed. The pita may puff up into a pocket.
- Remove and cover with a clean kitchen towel to keep it soft.
- Repeat with the remaining dough.
Option B: In the oven
- Preheat the oven to 245Β°C (475Β°F) with a baking steel, pizza stone or sturdy baking tray inside.
- Carefully place a rolled pita on the hot surface.
- Bake for approximately 2-4 minutes, until puffed.
- Remove carefully and cover with a clean kitchen towel.
Step 6: Keep the pitas soft
- Stack the freshly cooked pitas under a clean towel as you work.
- Let them cool slightly while covered.
- For extra softness, brush very lightly with olive oil or butter if desired.
