Ingredients

- 1 1/4 cups water (or vegetable broth)
- 2 cups fresh arugula
- 1/2 cup crumbled feta cheese
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup red onion (thinly sliced)

- 2 tablespoons lemon juice

Instructions
- Prepare the couscous by bringing the water or broth to a boil. Add couscous, stir, cover, and let sit for 5 minutes.
- Combine the fresh arugula, feta, cherry tomatoes, and red onion in a large bowl.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Assemble the salad by gently folding the couscous into the vegetable mixture and drizzling with dressing. Toss lightly and chill for 30 minutes.
Notes
Make ahead by preparing couscous and chopping vegetables separately until ready to serve. For added flavor, consider roasting cherry tomatoes.
