Description

Ingredients

  • 2 large potatoes (Russet or Yukon Gold)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Prepare the potatoes: Peel if desired and slice into 1/4-inch thick rounds.
  2. Boil the slices in salted water for about 5 minutes until slightly tender.
  3. Drain and cool the potato slices in a colander.
  4. Combine flour, baking powder, salt, and pepper in a mixing bowl.
  5. Heat oil in a deep frying pan to approximately 350°F (175°C).
  6. Dredge each cooled potato slice in the flour mixture.
  7. Fry the slices in the hot oil until golden brown, about 3-4 minutes per side.
  8. Drain the cooked scallops on paper towels and serve hot.

Notes
