Ingredients

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, bring a pot of water to a gentle simmer.
  3. Crack the eggs into small bowls.
  4. Gently slide the eggs into the simmering water and poach for about 3-4 minutes, or until the whites are set but the yolks are still runny.
  5. Meanwhile, mash the ripe avocado in a bowl and season with salt, pepper, and lemon juice if desired.
  6. Spread the mashed avocado evenly over the toasted bread.
  7. Once the eggs are done, carefully remove them from the water with a slotted spoon and place one egg on each slice of avocado toast.
