Ingredients

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis into fry-shaped pieces.
  3. In a bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini piece into the egg, then coat with the breadcrumb mixture.
  6. Place the coated zucchini fries on a baking sheet lined with parchment paper.
  7. Spray the fries lightly with cooking spray.
  8. Bake for 20-25 minutes or until golden brown and crispy.
