A creamy and indulgent dessert that combines the flavors of banana pudding and cheesecake, all on a buttery vanilla wafer crust.

- 2 cups crushed vanilla wafers
- 1/2 cup unsalted butter, melted
- 3 packages (8 ounces each) cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 2 ripe bananas, mashed
- 1 cup whipped cream
- 1–2 bananas, sliced
- Crushed vanilla wafers (for topping)
- Optional: banana pudding mix (prepared, for an extra layer)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust: In a bowl, mix the crushed vanilla wafers with melted butter until well combined. Press this mixture into the bottom of your springform pan.
- Combine cream cheese and sugar in a large mixing bowl, using an electric mixer until creamy and smooth.
- Add eggs one at a time, mixing thoroughly after each addition.
- Incorporate the heavy cream, vanilla extract, and mashed bananas until well blended.
- Pour the cheesecake filling over the crust in the springform pan, spreading it evenly.
- Bake in the preheated oven for 55-65 minutes, or until the center is set with a slight jiggle.
- Cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight.
- Top with whipped cream, sliced bananas, and crushed vanilla wafers just before serving.
- Serve and enjoy!
Notes
This cheesecake can be made a day in advance to enhance the flavors. It pairs wonderfully with fresh berries or a drizzle of chocolate sauce.
