1–2 tablespoons chocolate chips
A little coarse sugar for a lightly crisp top

23 x 13 cm (9 x 5 inch) loaf pan
Parchment paper
Two mixing bowls
Whisk, fork and spatula
Wire cooling rack
Toothpick or food thermometer
Instructions
Follow these eight steps for a moist, golden loaf. The batter comes together quickly, so preheat the oven first.
Step 1: Prepare the oven and pan
- Preheat the oven to 175°C (350°F).
- Grease a loaf pan measuring approximately 23 x 13 cm (9 x 5 inches), or line it with parchment paper.
- Make sure the oven is fully preheated before baking.
Step 2: Mash the bananas
- Peel the bananas and mash them in a large mixing bowl with a fork.
- Leave a few small lumps if you like a more rustic texture.
- For the sweetest flavor, use bananas with plenty of brown spots.
Step 3: Mix the wet ingredients
- Add the melted butter and sugar to the mashed bananas.
- Whisk until combined.
- Add the eggs and vanilla extract.
- Mix until smooth and evenly incorporated.
Step 4: Combine the dry ingredients
- In a separate bowl, whisk together the flour, baking soda, baking powder and salt.
- Add the dry ingredients to the banana mixture.
- Stir gently with a spatula until just combined. Do not overmix, as this can make the bread dense.
Step 5: Add the blueberries and chocolate chips
- Toss the blueberries with 1 tablespoon of flour to help reduce sinking and excess moisture.
- Gently fold the blueberries and chocolate chips into the batter.
- If the batter seems unusually thick, add 1 tablespoon of milk at a time, using only as much as needed.
- If you are using frozen blueberries, add them straight from the freezer without thawing to help prevent the batter from turning purple.
Step 6: Fill the loaf pan
- Pour the batter into the prepared loaf pan.
- Smooth the top with a spatula.
- Sprinkle the extra chocolate chips and blueberries over the surface, if desired.
Step 7: Bake
- Bake for 50-65 minutes, depending on your oven and pan.
- Begin checking at around 45-50 minutes.
- If the top browns too quickly, loosely cover it with aluminum foil.
- Insert a toothpick into the center, avoiding a melted chocolate chip. It should come out without wet batter. A few moist crumbs are fine.
Step 8: Cool and serve
- Let the bread rest in the pan for 10-15 minutes.
- Carefully remove it and transfer it to a wire rack.
- Allow it to cool for another 20-30 minutes before slicing so the crumb can set.
- Serve slightly warm for delicious, melty chocolate chips.
