Ingredients

  • 4 cups beef broth

  • 1/2 cup mirin
  • 1/4 cup brown sugar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, sliced
  • 2 green onions, chopped
  • 1 package udon noodles
  • Salt and pepper to taste

Instructions

  1. Season the beef short ribs with salt and pepper.
  2. In a large pot, sear the short ribs on all sides until browned.
  3. Add the chopped onion, garlic, and ginger to the pot and sauté until fragrant.
  4. Pour in the beef broth, soy sauce, mirin, and brown sugar. Bring to a boil.

  6. Remove the beef from the pot and shred it into pieces.
  7. Cook the udon noodles according to package instructions.
  8. Serve the udon noodles in bowls, topped with the braised beef and broth. Garnish with green onions.
