- 1 package udon noodles

Instructions
- Season the beef short ribs with salt and pepper.
- In a large pot, sear the short ribs on all sides until browned.
- Add the chopped onion, garlic, and ginger to the pot and sauté until fragrant.
- Pour in the beef broth, soy sauce, mirin, and brown sugar. Bring to a boil.

- Cook the udon noodles according to package instructions.
- Serve the udon noodles in bowls, topped with the braised beef and broth. Garnish with green onions.
