Description

Tender lamb shanks braised in a rich red wine gravy that melts in your mouth, perfect for cozy dinners or special occasions.


Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef or chicken broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and pepper to taste
  • Mashed potatoes for serving

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Heat the olive oil in a large Dutch oven over medium heat.
  3. Add the lamb shanks carefully and sear them until browned, about 10 minutes.
  4. Remove the shanks and set them aside.
  5. Toss in the chopped onion, carrots, and celery, sautéing until softened, about 5 minutes.
  6. Include the minced garlic and cook for an additional minute.
  7. Pour in the red wine and scrape up any browned bits from the pot.
  8. Return the lamb shanks to the pot and add the broth, rosemary, thyme, salt, and pepper.
  9. Bring to a simmer, cover, and transfer to the oven.
  10. Braise for 2.5 to 3 hours until fork-tender.
  11. Serve hot with creamy mashed potatoes and gravy.

Notes

This dish can be made a day in advance for deeper flavors. You can also use an Instant Pot to speed up the process by pressure cooking for 45 minutes.
