- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups red wine
- 2 cups beef or chicken broth
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt and pepper to taste
- Mashed potatoes for serving
Instructions
- Preheat your oven to 325°F (160°C).
- Heat the olive oil in a large Dutch oven over medium heat.
- Add the lamb shanks carefully and sear them until browned, about 10 minutes.
- Remove the shanks and set them aside.
- Toss in the chopped onion, carrots, and celery, sautéing until softened, about 5 minutes.
- Include the minced garlic and cook for an additional minute.
- Pour in the red wine and scrape up any browned bits from the pot.
- Return the lamb shanks to the pot and add the broth, rosemary, thyme, salt, and pepper.
- Bring to a simmer, cover, and transfer to the oven.
- Braise for 2.5 to 3 hours until fork-tender.
- Serve hot with creamy mashed potatoes and gravy.
Notes
This dish can be made a day in advance for deeper flavors. You can also use an Instant Pot to speed up the process by pressure cooking for 45 minutes.
