Ingredients

  • 2 cups butternut squash, roasted and pureed
  • 2 cups all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon nutmeg
  • 1 cup shredded mozzarella cheese
  • 1/4 cup butter
  • Fresh sage leaves for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the butternut squash puree, ricotta cheese, Parmesan cheese, nutmeg, and salt.
  3. In another bowl, combine the flour, eggs, and salt to form a dough.
  4. Roll out the dough and cut into squares.
  5. Place a spoonful of the filling on each square and fold to create ravioli.
  6. Boil the ravioli in salted water until they float, about 3-4 minutes.
  7. In a baking dish, layer the cooked ravioli and sprinkle with mozzarella cheese.
  8. Melt the butter and drizzle over the top.
  9. Bake in the oven for 20-25 minutes until the cheese is golden and bubbly.
  10. Garnish with fresh sage leaves before serving.
