Ingredients

  • 8 oz ramen noodles
  • 1 lb shrimp, peeled and deveined
  • 1 cup corn, fresh or frozen
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 4 cups chicken or vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in the bell pepper and corn, cooking for another 3-4 minutes.
  4. Add the shrimp and Cajun seasoning, cooking until shrimp are pink.
  5. Pour in the broth and bring to a boil.
  6. Add ramen noodles and cook according to package instructions.
  7. Season with salt and pepper to taste before serving.

Notes

  • Adjust the amount of Cajun seasoning to taste.
  • For a spicier kick, add sliced jalapeños.
