- 4 large Portobello mushrooms
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella, diced
- 1/4 cup fresh basil, chopped
- 2 tablespoons balsamic glaze
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the Portobello mushrooms and remove the stems.
- In a bowl, mix together the cherry tomatoes, mozzarella, basil, olive oil, salt, and pepper.
- Stuff each Portobello mushroom cap with the tomato and mozzarella mixture.
- Drizzle balsamic glaze over the stuffed mushrooms.
- Place the mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender.
- Serve warm and enjoy!

- For a vegan option, substitute mozzarella with a plant-based cheese.
- These mushrooms can be grilled instead of baked for a smoky flavor.
