Description

Delicious and healthy Caprese stuffed Portobello mushrooms filled with fresh mozzarella, tomatoes, and basil.


Ingredients

  • 4 large Portobello mushrooms
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the Portobello mushrooms and remove the stems.
  3. In a bowl, mix together the cherry tomatoes, mozzarella, basil, olive oil, salt, and pepper.
  4. Stuff each Portobello mushroom cap with the tomato and mozzarella mixture.
  5. Drizzle balsamic glaze over the stuffed mushrooms.
  6. Place the mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender.
