Cauliflower Fried Rice: Discover a Healthy Twist!

Description

A healthy and low-carb alternative to traditional fried rice made with cauliflower instead of rice.


Ingredients

Scale
  • 1 medium head of cauliflower, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower using a food processor or a box grater until it resembles rice.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add the mixed vegetables and cook for 3-4 minutes until tender.
  5. Push the vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
  6. Add the grated cauliflower to the skillet and stir to combine with the vegetables and eggs.
  7. Pour soy sauce over the mixture and stir well to combine.
  8. Season with salt and pepper to taste, and cook for an additional 5 minutes until the cauliflower is tender.
  9. Garnish with chopped green onion before serving.

Notes

  • For a vegan version, omit the eggs or replace them with scrambled tofu.
  • Feel free to add your favorite proteins like chicken, shrimp, or tofu.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
