Description
A healthy and low-carb alternative to traditional fried rice made with cauliflower instead of rice.
Ingredients

- 1 medium head of cauliflower, grated
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 green onion, chopped
- Salt and pepper to taste
Instructions
- Grate the cauliflower using a food processor or a box grater until it resembles rice.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Add the mixed vegetables and cook for 3-4 minutes until tender.
- Push the vegetables to one side of the skillet and pour the beaten eggs into the other side, scrambling them until fully cooked.
- Add the grated cauliflower to the skillet and stir to combine with the vegetables and eggs.
- Pour soy sauce over the mixture and stir well to combine.
- Season with salt and pepper to taste, and cook for an additional 5 minutes until the cauliflower is tender.
- Garnish with chopped green onion before serving.
Notes
- For a vegan version, omit the eggs or replace them with scrambled tofu.
- Feel free to add your favorite proteins like chicken, shrimp, or tofu.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
