- 1 pound ground beef
- 1 package cheese tortellini
- 1 can enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
- Stir in the cumin, chili powder, salt, and pepper.
- Cook the cheese tortellini according to package instructions and drain.
- In a large mixing bowl, combine the cooked beef mixture, tortellini, and half of the enchilada sauce.
- Spread a layer of the remaining enchilada sauce in a baking dish.
- Pour the beef and tortellini mixture into the baking dish and top with shredded cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Garnish with fresh cilantro if desired and serve hot.
Notes
- Feel free to add vegetables like bell peppers or corn for extra flavor.
- This dish can be made ahead of time and stored in the refrigerator before baking.
- For a spicier version, add jalapeños or hot sauce to the beef mixture.
