Ingredients

  • 1 pound ground beef
  • 1 package cheese tortellini
  • 1 can enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
  3. Stir in the cumin, chili powder, salt, and pepper.
  4. Cook the cheese tortellini according to package instructions and drain.
  5. In a large mixing bowl, combine the cooked beef mixture, tortellini, and half of the enchilada sauce.
  6. Spread a layer of the remaining enchilada sauce in a baking dish.
  7. Pour the beef and tortellini mixture into the baking dish and top with shredded cheese.
  8. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  9. Garnish with fresh cilantro if desired and serve hot.
