Description

Ingredients

  • 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 slices bacon, chopped
  • 1 small yellow onion, diced
  • 2 cups shredded cheese (such as cheddar or mozzarella)
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chopped bacon in a large skillet over medium heat until crispy. Remove and drain on paper towels.
  3. Add the diced onion to the same skillet and cook until translucent.
  4. Combine the chicken, bacon, onion, cheese, cream of chicken soup, chicken broth, salt, and pepper in a large mixing bowl.
  5. Transfer the mixture to a greased casserole dish and spread it evenly.
  6. Sprinkle breadcrumbs on top if using.
  7. Bake for 25-30 minutes, or until bubbly and golden on top.
  8. Let cool for a few minutes before serving.
