- 2 lbs russet or Yukon Gold potatoes, peeled and thinly sliced
- 2 cups diced cooked ham
- 2 cups shredded cheese (cheddar or a blend)
- 1 cup sour cream
- 1 can cream of chicken soup
- 1/2 cup milk
- Salt and pepper to taste
- Optional: chopped green onions or breadcrumbs for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the sliced potatoes, diced ham, shredded cheese, sour cream, cream of chicken soup, and milk in a large mixing bowl.
- Season generously with salt and pepper to taste.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
- Sprinkle with chopped green onions or breadcrumbs on top if desired.
- Bake for 45-55 minutes, until the potatoes are tender and the casserole is bubbly and golden on top.
- Allow to cool slightly before serving.
