- 4 cups sweet corn (fresh or frozen)
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup cotija cheese, crumbled
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon lime juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the corn, mayonnaise, sour cream, cotija cheese, cheddar cheese, chili powder, garlic powder, lime juice, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- Bake in the preheated oven for 25-30 minutes, or until bubbly and golden on top.
- Remove from the oven and let it cool slightly before serving.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add diced jalapeños to the mixture.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
