Ingredients

  • 1 lb ground pork
  • 1 can (15 oz) enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 corn tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a large skillet over medium heat and add the ground pork, browning thoroughly.
  3. Drain any excess fat from the pork.
  4. Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.
  5. Sprinkle in the cumin, salt, and pepper, stirring well.
  6. Fold in the black beans and corn until combined and heated through.
  7. Layer in a baking dish: start with 3 corn tortillas, half the pork mixture, a third of the enchilada sauce, and a third of the shredded cheese. Repeat this process, finishing with a final layer of tortillas, sauce, and cheese on top.
  8. Cover with foil and bake for 20 minutes, then remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  9. Garnish with fresh cilantro before serving.
