- 1 lb ground pork
- 1 can (15 oz) enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 corn tortillas
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Heat a large skillet over medium heat and add the ground pork, browning thoroughly.
- Drain any excess fat from the pork.
- Add the diced onion and minced garlic, cooking until softened, about 3-4 minutes.
- Sprinkle in the cumin, salt, and pepper, stirring well.
- Fold in the black beans and corn until combined and heated through.
- Layer in a baking dish: start with 3 corn tortillas, half the pork mixture, a third of the enchilada sauce, and a third of the shredded cheese. Repeat this process, finishing with a final layer of tortillas, sauce, and cheese on top.
- Cover with foil and bake for 20 minutes, then remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
Make a day ahead by preparing the pork mixture and refrigerating it. Customize using different meats or spice levels based on preference.
