A comforting and creamy dish featuring tender chicken and buttery baby potatoes enveloped in a rich garlic Parmesan sauce.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1.5 pounds baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium heat.
  3. Season the chicken with salt and pepper, then brown it on both sides in the skillet.
  4. Add minced garlic and cook for about a minute.
  5. Toss in the halved baby potatoes and sauté for another 5 minutes.
  6. Pour in heavy cream and sprinkle Parmesan cheese, stirring gently.
  7. Bring to a gentle simmer, then transfer the skillet to the oven.
  8. Bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
  9. Garnish with fresh parsley before serving.

Notes

You can prepare everything except the final bake in advance. For a lighter sauce, substitute half-and-half for heavy cream.
