- 4 boneless, skinless chicken thighs or breasts
- 1.5 pounds baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Heat olive oil in a large oven-safe skillet over medium heat.
- Season the chicken with salt and pepper, then brown it on both sides in the skillet.
- Add minced garlic and cook for about a minute.
- Toss in the halved baby potatoes and sauté for another 5 minutes.
- Pour in heavy cream and sprinkle Parmesan cheese, stirring gently.
- Bring to a gentle simmer, then transfer the skillet to the oven.
- Bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
You can prepare everything except the final bake in advance. For a lighter sauce, substitute half-and-half for heavy cream.
