  • 2 cups okra, sliced
  • 2 tablespoons Cajun seasoning

  • Green onions, chopped for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Brown the chicken pieces in a single layer for about 5-7 minutes.
  3. Add the Andouille sausage and let it sizzle for 5 minutes.
  4. Sauté the diced onion, bell pepper, celery, and garlic until softened, about 5 minutes.
  5. Pour in the chicken broth and diced tomatoes, stirring to combine.
  6. Incorporate the okra along with Cajun seasoning, salt, and pepper.
  7. Simmer uncovered for 30-40 minutes.
  8. Serve the gumbo over a bed of rice and sprinkle with green onions.
