- 1 lb chicken, cut into pieces
- 1/2 lb Andouille sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 cups okra, sliced
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Cooked rice for serving
- Green onions, chopped for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Brown the chicken pieces in a single layer for about 5-7 minutes.
- Add the Andouille sausage and let it sizzle for 5 minutes.
- Sauté the diced onion, bell pepper, celery, and garlic until softened, about 5 minutes.
- Pour in the chicken broth and diced tomatoes, stirring to combine.
- Incorporate the okra along with Cajun seasoning, salt, and pepper.
- Simmer uncovered for 30-40 minutes.
- Serve the gumbo over a bed of rice and sprinkle with green onions.
Notes
For deeper flavors, prepare the gumbo a day in advance. Adjust the heat with additional Cajun seasoning or hot sauce as preferred.
