Ingredients

- 2 lbs boneless, skinless chicken breasts or thighs
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the mushrooms in a large skillet over medium heat until softened, about 5 minutes.
- Add the chicken pieces and cook until golden brown, roughly 6-7 minutes.
- Stir in the spinach and cook until wilted, about 2-3 minutes.
- Transfer the mixture to an oven-safe dish and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Serve warm and enjoy.
Notes
For make-ahead, prepare the mixture a day in advance and refrigerate. You can also substitute chicken with turkey or cubed tofu.
