- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup

- 2 green onions, sliced
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- Sesame seeds for garnish
Instructions
- Cook the soba noodles according to package instructions, then drain and rinse under cold water.
- In a bowl, whisk together sesame oil, soy sauce, rice vinegar, honey or maple syrup, grated ginger, and minced garlic to make the dressing.
- In a large mixing bowl, combine the cooled soba noodles, shredded carrots, and cucumber.
- Pour the dressing over the noodle mixture and toss to combine.
- Garnish with sliced green onions and sesame seeds before serving.
Notes
- For a spicier kick, add a dash of chili oil to the dressing.
- This dish can be made ahead of time and stored in the refrigerator for up to 2 days.
