Ingredients

  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 2 green onions, sliced
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • Sesame seeds for garnish

Instructions

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water.
  2. In a bowl, whisk together sesame oil, soy sauce, rice vinegar, honey or maple syrup, grated ginger, and minced garlic to make the dressing.
  3. In a large mixing bowl, combine the cooled soba noodles, shredded carrots, and cucumber.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Garnish with sliced green onions and sesame seeds before serving.

Notes

  • For a spicier kick, add a dash of chili oil to the dressing.
