Description

Ingredients

  • 1/2 cup (113g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 1/3 cup (35g) unsweetened cocoa powder
  • 1/4 tsp salt
  • 3/4 cup (180ml) heavy cream
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your muffin pan or mini cake molds.
  2. Whisk together melted butter and granulated sugar until glossy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Sift together flour, cocoa powder, and salt in another bowl.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Divide the batter evenly into molds, filling each about three-quarters full.
  7. Bake for 12–15 minutes until the edges appear set.
  8. Cool completely in molds before removing.
  9. Heat the cream until steaming, pour over chocolate chips and butter, let sit for 2 minutes, then stir until smooth.
  10. Pour ganache over mini cakes and let it cascade down the sides.

Notes

Make-ahead tips: Prepare the batter in advance and refrigerate overnight. Use an air fryer for a quicker option, reducing baking time.
